Banana Nut Bread

Prep Time: 15 min

Serves: 8

Ingredients:

  • 115 g Walnuts, toasted and coarsely chopped
  • 245 g all-purpose Flour
  • 150 g granulated White Sugar
  • 2 tsp Baking Powder
  • 1/4 tsp Baking Soda
  • 1/4 tsp Salt
  • 2 tsp ground Cinnamon
  • 1 tsp ground Cloves
  • 2 large Eggs, lightly beaten
  • 113 g Butter, room temperature
  • 4 very ripe Bananas (500g), mashed
  • 1 tsp Vanilla extract

Direction:

  1. Preheat oven to 180 degrees C and place oven rack to middle position.
  2. Butter and flour the bottom and sides of a 23 x 13 x 8 cm bread-loaf pan. Set aside.
  3. In a large bowl combine the Flour, Sugar, Baking powder, Baking soda, Salt, Cinnamon, Cloves, and nuts. Set aside.
  4. In a mixing bowl combine the mashed Bananas, Eggs, melted butter, and Vanilla. Using a wooden spoon or spatula, gently fold the wet ingredients (banana mixture) into the dry ingredients until the batter is thick and chunky (Do not over mix, as to not activate the gluten in flour which makes the dough tough and rubbery).
  5. Scrape batter into prepared pan and bake until bread is golden brown and a  toothpick inserted in the center comes out clean, about 55 to 60 minutes.
  6. Place on a wire rack to cool and then remove the bread from the pan. Serve warm or at room temperature.

Chef’s tips: This bread can be frozen and enjoyed for up to a month.
