Vegetable Fried Rice

Serves: 4

Ingredients:

  • 1 tbs Vegetable Oil
  • 1 medium Onion, finely chopped
  • 1 cup Green Peas, frozen
  • 1 medium Carrot, cut into small cubes
  • 1 medium Red Capsicum, cut into small cubes
  • 1 tbs Sesame Seed Oil
  • 1 tbs Ginger Root, finely chopped
  • 3 cups Steamed Rice, cooled
  • 2 Eggs. Lightly beaten
  • 4 tbsp. Soy Sauce
  • 4 Spring Onions, chopped (optional garnish)

Direction:

  1. Prepare all vegetables and set aside.
  2. Heat Vegetable Oil in wok, add vegetables, starting with Onion, Green Peas, Carrots and Capsicum sauté for 2-3 minute, remove from pan and set aside.
  3. Using the same wok, heat Sesame Seed Oil; add crushed Ginger and sauté for 1 minute. Add cooked Rice and sauté for an additional 2 minutes.
  4. Make a well in the center of the rice and add semi-beaten eggs. Scramble eggs until cooked and mix together with rice. Keep stirring until eggs and rice are well mixed.
  5. Return fried vegetables to the wok, and stir gently for a minute.
  6. Add soy sauce and stir until rice is light brown.
  7. Serve immediately with chopped Spring Onions for garnish.

Chef’ Tip: if you are using a large wok, you wont need to remove vegetables before frying the rice. Just push them to one side and add rice and other ingredients.
