Blueberry Pancakes

Serves: 4

Ingredients:

  • 2 cups All-Purpose Flour
  • 1 tbs Baking Powder
  • 3 tbs Icing Sugar
  • 1/2 tsp Salt
  • 2 large Eggs, slightly beaten
  • 2 tbs Butter, melted
  • 1 tsp Vanilla
  • 1 cup Milk
  • 1/2 cup cold Water
  • 1 cup Frozen Blueberries or 1-1/2 cup Fresh.

Direction:

  1. Sift together flour, baking powder, sugar, and salt.
  2. In a separate bowl, whisk together the Eggs, Butter, Vanilla and Milk; add to flour mixture, stirring only until smooth.
  3. The mixture should be somewhat thick, like a cake batter.
  4. Add Cold Water and continue stirring, add more cold water if needed to create a thin cake mix.
  5. Gently fold in Blueberries until evenly mixed.
  6. Cook pancakes on a hot griddle or greased frying pan using 1/4 cup of batter per pancake.
  7. Once the top starts to bubble, carefully flip and cook other side for about 1 minute. Or until the edges become slightly golden brown.
  8. Serve with your choice of Maple Syrup or Honey.
